- 2 liters of whole milk
- 500 g (about 2 ½ cups) of sugar
- 1 teaspoon of baking soda (helps prevent curdling)
- 1 tablespoon of butter (optional, for extra creaminess)
In a large, heavy-bottomed pot, combine the milk and sugar. Cook over medium heat, stirring constantly until the sugar dissolves.
Add the baking soda and continue stirring to prevent the milk from overflowing. Cook for about 1½ to 2 hours, stirring occasionally, until the mixture thickens and develops a caramel color.
Once it reaches your desired consistency (creamier or firmer), turn off the heat and let it cool. Store in jars or shape into pieces, wrapping them in parchment or rustic paper for a traditional touch.
